The Pasta Dish that Will Change Your Life

My pasta dish is a dish I am very proud of. I have always made it for my family and my mom would always say “This is better than a restaurant”. She’s also my mom so she may be biased, BUT let’s see how you all feel about it.

I used to use dairy products when I was at home, but now that I am on my own there isn’t any dairy products in my house. I used Silk Non-Dairy Whipping Cream (sold at Target or Walmart) and Earth Balance Vegan Butter. These are a great swap for those who want to enjoy the yumminess of dairy, but simply their bodies say NO! 

This recipe is unique because it tastes just like a dairy filled sauce, but it also has protein from the pasta that I use.

INGREDIENTS:

SAUCE-

  • Earth balance butter
  • Olive Oil
  • Fresh Basil
  • Shallots
  • Garlic Cloves 
  • Tomato Paste
  • Trader Joe’s Italian Bomber Peppers
  • Silk Non-dairy Whipping Cream (or a cashew base will work)
  • Colorful grape tomatoes
  • Basil
  • Salt/Pepper
  • Garlic Powder
  • Onion Powder 
  • 21 Seasoning Salute
  • Dried Oregano
  • Red Pepper Flakes
  • PASTAAAA WATERRRRRRRRR

PASTA-

  • Banza Chickpea Pasta

HOW TO MAKE THE PASTA:

  1. Read the box instructions 😀
  2. Salt your pasta water PLS
  3. Take out a minute or 2 earlier than the instructions say, that way you can cook it fully in the sauce.

HOW TO MAKE THE SAUCE:

  1. Heat up your medium sized pan to a medium heat with your oil and butter. Use the amount that you would think would be enough for your pasta.
  2. Chop up your garlic and shallots finely, then add to your pan. Let brown for a few minutes. 
  3. Add the italian peppers and red pepper flakes. Let those sizzle for a minute or so.
  4. Chop the grape tomatoes in half and add to the pan along with the tomato paste.
  5. Add your seasonings. Season to taste; whatever that means for you.
  6. Add the whipping cream; I eyeball this. Add a little at first, then stir to see how much it makes. Then adjust after. 
  7. Let simmer on a low heat while your pasta is boiling
  8. Reserve about a ¼ cup of the pasta water, add a little bit at a time to the sauce to make it less thicc (yes TWOOOOO C’s).
  9. Add your freshly chopped basil and cooked pasta. 
  10. VOILAAAAAA! Top with some nutritional yeast for that cheesy flavor or parmesan.
