Hummus Buddha Bowl

WHAT YOU NEED:

  • Chicken (I use about 6 oz)
  • Hummus (I use homemade normally, but Trader Joe’s has great options)
  • Kale
  • Zucchini
  • Mushrooms
  • Grape Tomatoes
  • Red Onion 
  • Green Onion
  • Peppercinis 
  • Olive Oil

SEASONINGS:

  • Garlic Powder
  • Onion Powder
  • 21 Seasoning Salute
  • Black Pepper
  • Salt 

HOW TO MAKE IT:

  1. Cut up all veggies
  2. Add zucchini and mushrooms to a bowl 
  3. Drizzle a little oil and then season zucchini and mushrooms with salt and pepper 
  4. Cut up chicken then season fully with all seasonings
  5. In a medium sized pan, heat up to medium heat with olive oil
  6. Add chicken and let cook 2-3 minutes before adding zucchini
  7. Assemble the bowl with a bed of kale then add cooked veggies
  8. Top with the chicken 
  9. Add the tomatoes and red onion
  10. Scoop a big spoonful of hummus into the bowl
  11. Finishing touch with the green onion
