WHAT YOU NEED:
- Chicken (I use about 6 oz)
- Hummus (I use homemade normally, but Trader Joe’s has great options)
- Kale
- Zucchini
- Mushrooms
- Grape Tomatoes
- Red Onion
- Green Onion
- Peppercinis
- Olive Oil
SEASONINGS:
- Garlic Powder
- Onion Powder
- 21 Seasoning Salute
- Black Pepper
- Salt
HOW TO MAKE IT:
- Cut up all veggies
- Add zucchini and mushrooms to a bowl
- Drizzle a little oil and then season zucchini and mushrooms with salt and pepper
- Cut up chicken then season fully with all seasonings
- In a medium sized pan, heat up to medium heat with olive oil
- Add chicken and let cook 2-3 minutes before adding zucchini
- Assemble the bowl with a bed of kale then add cooked veggies
- Top with the chicken
- Add the tomatoes and red onion
- Scoop a big spoonful of hummus into the bowl
- Finishing touch with the green onion
