plan out your meals!

When grocery shopping, I always create a list that will accumulate into the dishes I will be making that week.

I like to write down the different combinations I can make with the groceries I will be buying that week.

I.E.: Blackbean Tacos, Black Bean Fiesta Bowl, Huevos Ranchero w/ Black Bean. 3 different combinations with one ingredient.

It helps you eat more freely while still planning out what you want to make that week.

cooking chicken!

When cooking chicken, make sure it is fully defrosted. I know that seems self-explanatory, but hey we gotta start somewhere!

Also, to make it easier on yourself, cube the chicken. Most of the time people mess chicken up when cooking the breast whole, this is okay because it is hard to nail chicken the first time. So to help you cook it better, cube it so it can cook faster and easier for you.

take care

take time every week to pamper yourself: take a bath, shave, do a face mask, do a hair mask, self-tan etc. DO WHAT MAKES YOU FEEL GOOOD!

spend time in the sun; wear sunscreen pls.

get ready for yourself!! it makes you feel great and why the f*ck not!

be your own human

a quick reminder to be YOUR own human; be yourself and be there for yourself.

It’s okay to be alone, learn to embrace it. It is one of the best ways to learn about yourself and who you are.

be your authentic self because how is someone supposed to learn who you are if you don’t even know?

it’s okay to not be okay

I think in this day we often feel the need to be okay all the time. I am here to say it’s okay to admit you are not okay. I know it is hard to say, trust me I ignore it too. However, the best thing you can do for yourself is showing up and being there for you. It sounds weird, but it truly will help you. You have to be as nice to yourself as you would be to your friend or significant other. Accept and feel your feelings. Listen to your body and treat yourself nicely. Be patient.

Quick Salmon Poke Bowl

WHAT YOU NEED:

  • Salmon (4 oz, patties or fillets whatever you have)
  • Edamame beans
  • Avocado
  • Cucumber
  • Microwavable Jasmine Rice
  • Mayo 
  • Sriracha 

SEASONINGS:

  • Garlic Powder
  • Onion Powder
  • 21 Seasoning Salute
  • Salt
  • Black Pepper
  • Red Pepper Flakes

How to make it:

  1. Cube salmon and season. Toss into either an airfryer for 8 minutes on 380° or pan cook on medium heat for 8-10 minutes.
  2. In a medium sized bowl add the desired amount of rice and then cook in microwave for about 30-45 seconds.
  3. Assemble bowl with the rice and other ingredients
  4. In a small bowl, mix equal parts mayo and sriracha (or more depending on spice, I love it spicy)
  5. Top with the spicy mayo!
