The Juiciest & Phattest Turkey Burger

Let’s season your patties!

I love burgers. Any kind; beef, veggie, or turkey. Anything between a bun and tastes just like In N Out then SIGN ME UP! ALTHOUGH, we all do not have the luxury of eating out all the time or gracing the presence of In N Out.

So let’s bring take out to our kitchen! The major concept to understand and battle is if you want it, then have it. Take this with a grain of salt, or if you’re anything like me then SEASON IT BABY!

The key to any good burger whatever form, is the seasonings!

Ingredients:

  1. Ground Turkey (I use 4 oz)
  2. Garlic Powder
  3. Onion Powder
  4. 21 Seasoning Salute
  5. Onion Salt
  6. Salt
  7. Pepper
  8. Coconut Aminos
  9. Worchsheire

How to make it:

  1. In a bowl, combine all ingredients in one bowl.
  2. Form patty into about .5 in thick and about the circumference of the burger bun you are going to use (Spread out a little bit more than the bun because it will shrink when cooking)
  3. Heat up a medium-sized pan with some oil.
  4. Add patty to pan and cook for about 3-4 minutes each side.
  5. Assemble with all the burger goodies; red onion, lettuce, tomato, and some secret burger sauce!

Better Than Take-Out Lettuce Wraps

WHAT YOU NEED:

  • Butter Lettuce 
  • Ground Turkey Meat (I use about 4 oz)
  • Mushrooms
  • Green Onion
  • Spinach 
  • Canned Water Chestnuts 
  • Ginger 
  • Garlic 
  • Cilantro 
  • Yellow Onion
  • Olive Oil


SAUCE:

  • Coconut Aminos
  • Sriracha
  • Cilantro

Seasonings:

  • Garlic Powder
  • Onion Powder
  • 21 Seasoning Salute
  • Red Pepper Flakes
  • Salt
  • Pepper

HOW TO MAKE IT:

  1. Chop up all mushrooms, green onion, garlic, ginger, water chestnuts, yellow onion, cilantro, and spinach
  2. Mix seasonings and turkey meat in a bowl.
  3. Heat up a medium sized pan on medium heat and add yellow onion, mushrooms, ginger, and garlic
  4. Cook for about 2 minutes then add the turkey meat to cook for about 5 minutes
  5. Stir in a bowl equal parts coconut aminos and sriracha. Then add the cilantro
  6. Once meat is cooked through, add spinach and the sauce to the pan
  7. Cook for a minute or two until the spinach is wilted and cooked.
  8. Peel off two decent sized leaves from the butter lettuce bunch. Then set on a plate.
  9. Portion off the mixture into the two leaves, you may have enough to make a third one!
  10. Enjoy!

Hummus Buddha Bowl

WHAT YOU NEED:

  • Chicken (I use about 6 oz)
  • Hummus (I use homemade normally, but Trader Joe’s has great options)
  • Kale
  • Zucchini
  • Mushrooms
  • Grape Tomatoes
  • Red Onion 
  • Green Onion
  • Peppercinis 
  • Olive Oil

SEASONINGS:

  • Garlic Powder
  • Onion Powder
  • 21 Seasoning Salute
  • Black Pepper
  • Salt 

HOW TO MAKE IT:

  1. Cut up all veggies
  2. Add zucchini and mushrooms to a bowl 
  3. Drizzle a little oil and then season zucchini and mushrooms with salt and pepper 
  4. Cut up chicken then season fully with all seasonings
  5. In a medium sized pan, heat up to medium heat with olive oil
  6. Add chicken and let cook 2-3 minutes before adding zucchini
  7. Assemble the bowl with a bed of kale then add cooked veggies
  8. Top with the chicken 
  9. Add the tomatoes and red onion
  10. Scoop a big spoonful of hummus into the bowl
  11. Finishing touch with the green onion

The Munchie Moron’s Chocolate Chip Cookies

The chocolate chip cookies that has you forgetting your toxic ex. They are oh so gooey and they just melt in your mouth. Enjoy <3 – T & C

WHAT YOU NEED:

1 cup salted butter softened
1 cup white (granulated) sugar
1 cup light brown sugar packed
2 tsp pure vanilla extract
2 large eggs
2 cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp sea salt
Chocolate chips as many as you want! (we added @traderjoes dark chocolate peanut butter cups and some leftover chocolate chips)🍪🍪

HOW TO BAKE THEM:

Turn on the oven to 375°F. Line two baking sheets with wax paper and some oil. Roll out cookie dough into about 1 1/2 in balls. Bake for about 8-10 minutes until golden brown. Let cool for about 5 minutes before it is able to be scooped up by a spatula.

The Pasta Dish that Will Change Your Life

My pasta dish is a dish I am very proud of. I have always made it for my family and my mom would always say “This is better than a restaurant”. She’s also my mom so she may be biased, BUT let’s see how you all feel about it.

I used to use dairy products when I was at home, but now that I am on my own there isn’t any dairy products in my house. I used Silk Non-Dairy Whipping Cream (sold at Target or Walmart) and Earth Balance Vegan Butter. These are a great swap for those who want to enjoy the yumminess of dairy, but simply their bodies say NO! 

This recipe is unique because it tastes just like a dairy filled sauce, but it also has protein from the pasta that I use.

INGREDIENTS:

SAUCE-

  • Earth balance butter
  • Olive Oil
  • Fresh Basil
  • Shallots
  • Garlic Cloves 
  • Tomato Paste
  • Trader Joe’s Italian Bomber Peppers
  • Silk Non-dairy Whipping Cream (or a cashew base will work)
  • Colorful grape tomatoes
  • Basil
  • Salt/Pepper
  • Garlic Powder
  • Onion Powder 
  • 21 Seasoning Salute
  • Dried Oregano
  • Red Pepper Flakes
  • PASTAAAA WATERRRRRRRRR

PASTA-

  • Banza Chickpea Pasta

HOW TO MAKE THE PASTA:

  1. Read the box instructions 😀
  2. Salt your pasta water PLS
  3. Take out a minute or 2 earlier than the instructions say, that way you can cook it fully in the sauce.

HOW TO MAKE THE SAUCE:

  1. Heat up your medium sized pan to a medium heat with your oil and butter. Use the amount that you would think would be enough for your pasta.
  2. Chop up your garlic and shallots finely, then add to your pan. Let brown for a few minutes. 
  3. Add the italian peppers and red pepper flakes. Let those sizzle for a minute or so.
  4. Chop the grape tomatoes in half and add to the pan along with the tomato paste.
  5. Add your seasonings. Season to taste; whatever that means for you.
  6. Add the whipping cream; I eyeball this. Add a little at first, then stir to see how much it makes. Then adjust after. 
  7. Let simmer on a low heat while your pasta is boiling
  8. Reserve about a ¼ cup of the pasta water, add a little bit at a time to the sauce to make it less thicc (yes TWOOOOO C’s).
  9. Add your freshly chopped basil and cooked pasta. 
  10. VOILAAAAAA! Top with some nutritional yeast for that cheesy flavor or parmesan.

After-Workout Coffee Shake

I love to workout in the morning. I think it helps me stay productive throughout the day and helps me choose better options for my meals that day. Overall I feel better and I know if I didn’t do it before my school and work, it would never get done. 

I always end with an after-workout shake and I am not the one to really just drink the protein powder and water. I always wondered how I can make it fun and different! I saw a Tik Tok on how people would go to the worst corporation to deem to exist; Starbucks, to get espresso to mix with a Premier Protein Shake. I personally do not support this cooperation for many reasons, but that’s a discussion for later. 

THUS- My own coffee protein shake AT HOME!

INGREDIENTS:

  • Orgain Protein Powder- Any flavor (Or you can use whatever you have)
  • Cold Brew- Store bought or I use a French press to make my own cold brew
  • Oat milk- any milk you desire will do

HOW TO MAKE IT:

  1. Pour about 8 oz of cold brew into a glass
  2. Add your scoops of protein powder
  3. Whisk those ingredients together
  4. Add some oat milk 
  5. Add ice
  6. Then ENJOY

The Sauce You’re Gonna Want to Put on ANYTHING

–Can be used for chicken, salmon, grilled veggies, or even a leafy green salad

As I have said multiple times that, I do not measure ANYTHING. I simply season to taste and eyeball everything. I am here to help you do the same!

INGREDIENTS:

  • Dijon Mustard
  • White Wine Vinegar
  • Olive Oil
  • Sauteed Garlic
  • Onion Salt (Trader Joe’s Must Have)
  • 21 Seasoning Salute (Trader Joe’s Must Have)
  • Garlic Powder
  • Onion Powder
  • Red Pepper Flakes
  • Salt
  • Cracked Black Pepper

HOW TO DO IT:

  1. Put a good amount of dijon mustard in a bowl.
  2. Add equal parts vinegar and olive oil.
  3. Add the sauteed garlic
  4. Season with all of the above with whatever amount you want!
  5. Now you have a flavorful dressing that can be put on anything!

Letting Go IS OKAY

In my 20 years, I have experienced lots and lots of friendships. Some were good and some were very toxic. The lesson that seemed to never get through my own head is reading people’s character. I have always struggled with that problem. My mom was a great judge of character and she would always tell me when a friendship ended that “Well, I could have told that.” I always wondered why she had such a good character judgment and how I can achieve that level of understanding of others one day.

I’m here to say that I am not as wise and well-spoken as my mom is, but I do have a better understanding now. I am still learning who’s a bad guy and who’s a good guy.

There are friendships that are meant to happen in order to teach you lessons. And I know, I am thinking the same thing like “Why do I need another lesson to learn??” I understand the frustration. I too craved good friendships and good people to surround myself with in middle school, high school, and now college. It is something that everyone wants and deserves to have. And I mean deserve as in YOU deserve amazing people in your own life, but others DESERVE YOU in their life.

I think a worry many of us have is losing THEM as a friend. Especially if you do not set a boundary or express yourself completely. A lot more goes into it as in it’s hard to escape some friends when you are stuck in a high school where starting over isn’t an option with friends and that’s okay. It’s okay to have dealt with harmful friendships in your past and you do NOT need to continue to have them in your life. I think a concept that many of us struggle with is “Well I don’t want to burn a bridge” or “Well they don’t deserve to be cut off”. That’s your problem right there. You are putting their feelings and reactions above your own. That’s also okay. It takes time to understand yourself and to gain the confidence to speak for yourself.

I think it should be normal to have the people who have served their purpose in your journey to leave your life. I think it should be okay to not be friends with people from the past. This does not necessarily mean that I do not wish them the best because I do. It’s that I can’t be MY BEST if they’re in my life NOW. It should be normalized to set your boundaries and to let go of the negative and toxic friends we have had in the past or eveN THE CURRENT PRESENT!

You should not interrupt your environment, which is a direct reflection of your mental state, to keep harmful people in your life. It won’t be good for you or them. You need to surround yourself with people who bring you up and make you feel like nothing is wrong with you. Which is a feeling you most likely have had with past or current friendships. I have felt that way too.

I can tell you now that once I understood myself and let go of the negative energy, my friendships not only flourished into happy and healthy ones. But also the ones who were not meant to stay have already made their way to the door. Invest in yourself, set boundaries, and lastly CUT THEM OFF.

Grocery List!

First and for most I make my grocery lists the day I am going to the store. I take inventory of what I already have and throw away any gross old food. I then ensure I have enough bags and Pyrex’s to put away my fresh produce and groceries.

I separate my list into; produce, protein, etc.

Tessá’s Tips

All I can say is if you do not have an airfryer, then you are seriously missing out. I think this is a college must have, but also a tip into cooking. This device is so versatile and eliminates the heat from the oven. This is especially good because us college students do not WANT to pay for a big electricity bill, so if we can eliminate that stress then GO GET AN AIRFRYER!
